Why should we mix espresso?

There is a misconception that espresso is nothing more than a stronger form of coffee, but in reality it is a method of preparing coffee.

Most espresso lovers prefer this definition to simply describe it with the strong and intense flavors it offers.

According to the Specialty Coffee Association (SCA), "espresso is a 25-35 ml beverage prepared with 7 to 9 grams of coffee in which clean water is forced at 90.5-96.1ºC using 9-10 atmospheres of pressure, so that the coffee is ground. that the extraction time is between 20 and 30 seconds”.

So why should I mix espresso?

One of the reasons espresso is mixed before drinking is to evaluate the elasticity of the cream first, keeping in mind that this is an indicator of the quality of the extraction as well as the freshness of the roast.

If the #espresso crema is stirred until it breaks and reforms, it is considered elastic and therefore a good espresso, but this is not the biggest proof that the coffee is good, the flavor always dominates.

The second and most important reason for mixing espresso is balance, it's the hardest thing to achieve in life, I'm not saying mixing espresso will magically make it more balanced, but mixing espresso we have a much better drink. it is more homogeneous and our palate has a much more accurate perception with every sip.

Does moving the glass do the same?

This serves more than anything else to oxygenate the coffee and volatilize the aromatic compounds, but speaking of intensities it is less effective at integrating the drink, it is certainly much more effective than using a spoon to seek our great and precious balance.

To find its balance, we must mix our espresso and verify that the preparation is done correctly, just as the coffee we drink is fresh.
