What is Aerobic Fermentation in Coffee?


Aerobic fermentation occurs when oxygen is present. A good example of the aerobic fermentation process is natural coffees.

Cherries are picked from the trees and laid out on terraces or drying beds.

The degree of fermentation that occurs depends on the temperature and the time it takes for the cherries to dry.

Drying them in full sun will have less fermentation and less impact on the coffee because it will dry much faster.

Keep them in the shade, they dry more slowly and give the bacteria more time to break down the organic compounds. The longer the fermentation takes, the stronger the flavor will be.
